Here’s a recipe for those who love both Bundt cakes and chocolate! It’s a Tunnel of Fudge Cake from Jeanne at Art of Gluten-Free Baking. The original recipe, which Jeanne adapted to be gluten free, won 2nd place in a major recipe contest and actually turned out to be much more popular than the recipe that won 1st place, causing a major run on Bundt pans in 1966. Jeanne explains the name: “What happens when you bake it is that the outside becomes crisp and on the inside, a tunnel of fudge is formed that is dense and fudgey.” That’s actually more than a description; that’s an endorsement! Oh, and did I mention that there’s chocolate glaze, too?
