Texas Sheet Cake. When I was growing up here in Virginia, we called this recipe Secret Cake. Andrea of Simply Living Healthy provided a long listing of alternative names for her recipe, but Secret Cake was not one of them. She says that if you grew up in Texas—as she did—you simply called it Sheet Cake. She even shares one of the theories on the origin of that name. Trust me … if you have ever heard Texans talk about their state, the revelation of those specifics won’t surprise you.
Although Andrea reduced the size of this cake from the original recipe, she says that it still makes 12 generous servings. This cake is gluten-free and refined sugar free, but clearly just as decadent as the original gluten-full recipe. Hi Stephanie–I think you need to make this one for your family and report back. If you don’t use quinoa flour, I’ve made this recipe using gluten-free all-purpose flour and I’m happy to report that it turned out just as wonderful as the gluten-full version.
