Elana of Elana’s Pantry is well known for her almond flour recipes. After all, she wrote a cookbook called The Gluten-Free Almond Flour Cookbook and her almond flour-based Chocolate Chip Cookie recipe is right on the back of the bag of Honeyville Almond Flour! But she also recognizes that not everyone can eat almonds, or tree nuts of any kind. So in her second cookbook Gluten-Free Cupcakes, Elana also included some recipes that were made of coconut flour alone. This very appealing recipe for Strawberry Cupcakes was one of them. Grain-free, healthier—and more recently, paleo-friendly—baking is Elana’s specialty. Her latest cookbook is Paleo Cooking from Elana’s Pantry: Gluten-Free, Grain-Free, High Protein Recipes.
I know it’s cliche to say, but you really do wish you could reach through the screen and grab this treat! If you enjoy baked goods made using coconut flour, you will certainly enjoy this one. (Note: When I’m baking with coconut flour, I use Tropical Traditions brand.) Elana advises fresh strawberries only so make these cupcakes when those are in season where you live. Oh, and for those who don’t use agave nectar in their recipes, honey works fine as a substitute. I use honey in all of Elana’s cupcake recipes and love the results.
