Some of you know that I lead a gluten-free support group. During the summer Stacy Toth and Matt McCarry, who many of us know better as Paleo Parents, joined my group for our summer picnic. Stacy and Matt wrote Eat Like A Dinosaur: Recipe and Guidebook for Gluten-Free Children. They brought their three young, healthily rambunctious boys, who also “eat like a dinosaur” every day.
Stacy and Matt not only gave a great presentation, but they also brought their newest recipe creation with them … Samoa Brownies. Several gluten-free bloggers happened to be visiting me at the time. All of us were happy to see Stacy and family show up early at my home with these brownies—and plenty of extras—in hand! The Samoa Brownies were a huge hit with all of us as well as with my support group members. The combination of almond flour, eggs, coconut flakes, cocoa powder, maple syrup, honey, macadamia nuts, and chocolate chips really does equate to a slightly gooey Samoa Brownie. In fact, one of my support group members told me that she has made these brownies once a week every week since our picnic meeting 5 months ago. Yes, that’s how good these Samoa Brownies are!

Hey Shirley…Thanks for posting this recipe from Paleo Parents, it’s incredible! We are going to a dinner party tonight with friends who are on a Paleo Diet and I volunteered to bring the dessert. I found this on your site and must say it turned out beautiful and oh so good! Love the special caramel sauce and coconut.
