I was perusing Gluten-Free Cat’s Raw Food Thursdays event recently when I spied this Raw Lemon Strawberry Cheesecake with an Almond Crust from Victoria at Sweet & Healthy Living. As is true of many raw desserts—and cheesecakes specifically—this recipe calls for cashews. Other ingredients include oats (or almonds), almond butter, coconut oil, maple syrup, lemon juice, strawberries, and dates. Its one’s food processor and freezer that do most of the work in turning all these ingredients into a heavenly cheesecake. And Victoria says that it’s her simple strawberry sauce that literally makes the cake. I love that the strawberry sauce is divided and added in two parts, once when the cake pan is half full and again when it’s full, for that final presentation. Victoria points out that it’s the first application that allows you to perfect your technique—brilliant!

This looks amazing and raw cheesecake is something I’ve wanted to try for sometime now. I love cheesecake, but I’m trying to get back on my “no dairy” bandwagon, so the traditional version is off the menu. This looks like it will do the trick, though. Thanks, Shirley! Off to get the recipe.
Melissa–I, too, have been wanting to try a raw cheesecake. I’ve sampled both raw cheesecakes and Key Lime pies and been blown away by how good they are, but have not yet made one. This recipe looks to be amazing like you said (and that’s why I had to share it, of course!) and while I do love that classic cheesecake like the fabulous one of your mom’s, it doesn’t always love me.

That Strawberry Sauce seems to be good to be true! I could actually see it being used for a number of recipes.
