Lynn’s (Lynn’s Kitchen Adventures) dad does not care for bread pudding, but her mother loves bread pudding. So when it was Lynn’s mom’s birthday and she came for a visit, Lynn decided to treat her mom, but create a new variation on bread pudding. First she decided that she wanted a pumpkin version as a nod to fall. Then she decided that she wouldn’t actually use bread, but would make a yellow cake and use the small squares of cut-up cake in lieu of bread. Well, I, for one, am not at all surprised that the resulting Pumpkin Cake Pudding is now the new favorite dessert of everyone at Lynn’s house. In fact, we had a discussion in comments over at her blog and I’ll be trying her recipe using my Perfect Pound Cake soon!
Important: Note Lynn’s use of a gluten-free cake mix to make this recipe gluten free. She writes her recipes on her Lynn’s Kitchen Adventures site, so that anyone can use them, gluten free or not. She also has a dedicated allergy-friendly section of her site, where she features gluten-free, nut-free, and peanut-free recipes that she’s created to accommodate her family’s multiple food allergies/intolerances.
