What says Christmas and the holidays more than these Pressed Butter Cookies from Jeanne at Art of Gluten-Free Baking? Not much in my opinion. You might better recognize these treats by their other names, Swedish Butter Cookies and Spritz Cookies. Many look forward to these delicate, festive, almost melt-in-your-mouth confections that tend to appear most often during holiday celebrations. Think Christmas trees, bells, wreaths, and the like. Some who make these cookies like to color their dough before pressing or add tiny sprinkles before baking. Jeanne likes to melts dark chocolate to turn her pressed butter cookies into delicious sandwich cookies.
Jeanne traveled cross country and presented at one of my recent support group meetings, cookie press in tow, so I and my group members got to taste these cookies made by her own hand. And, wow, they were outstanding! If you don’t already know Jeanne, she has been dispensing her considerable gluten-free baking knowledge for years through her blog, Art of Gluten-Free Baking (formerly called Four Chickens, which by the way remains Jeanne’s Twitter handle). Now she’s come out with her first cookbook, Gluten-Free Baking for the Holiday: 60 Recipes for Traditional Festive Treats. It’s making “the best of 2012” lists from mainstream sites like The Daily Meal and, just as importantly, from homes like yours, so you’ll want to check it out.
