There have been lots of folks who have been under the weather this winter. When Son was a little guy, whenever he was feeling “puny,” he would always request sherbet. Sherbet definitely perks one up with its lighter taste, but tart flavoring. And this easy-to-make Pomegranate Sherbet recipe of mine fits the bill for either those who are under the weather or those who are feeling great, but need a treat. It’s gluten free, dairy free, and refined sugar free. Just mix up some pomegranate juice, canned full-fat coconut milk, and liquid sweetener of choice and churn in your ice cream maker. Of course, this sherbet’s naturally pink color makes it the idea selection for Valentine’s Day or your little one’s princess birthday party!
