You’d think that making gluten-free versions of Girl Scout cookies would be really difficult. So gluten-free, dairy-free, and paleo versions would be next to impossible, right? Well, that doesn’t have to be true for gluten-free versions of Girl Scout cookies ( as we saw with Tia’s version of Thin Mints or the Top 10 Best Gluten-Free Girl Scout Cookie “Knockoff’ Recipes) and it doesn’t have to be true for paleo versions either. Well, at least not when Elana of Elana’s Pantry is doing the recipe development. While Elana’s recipe has several steps, it is actually pretty simple and straightforward. Elana uses ingredients like dark chocolate, coconut oil, honey, coconut sugar, an egg, and her “trademark” almond flour to create these stellar paleo ”knockoff” Samoa cookies. Best of all, in just a little over 20 minutes, you can be enjoying these treats!
