“Grab and Go!” Maple Pecan Oatmeal Breakfast Bars

One convenience that many of us miss when going gluten free is a grabbing a granola bar or protein bar when needed. So many of the bars that one can pick up on the run are not gluten free. Even when they are, they still might include other ingredients that we cannot safely eat (or prefer to skip), are unsatisfying for “fuel,” and often cost more than we’d like to pay. So we turn to making our own bars and ultimately change our opinion of what convenience is. When gluten free and trying to eat healthy—as well as in a more frugal way—making one’s own healthy bars is truly the best solution. Well, actually Megan’s (Allergy Free Alaska) “Grab and Go!” Oatmeal Breakfast Bars are the perfect solution!

These bars are a recipe that Megan, with the help of her oldest daughter, re-created from Laura Ingalls’ recipe in Little House in the Big Woods. Megan says that these bars are very adaptable to different ingredients/flavors. She shares their two favorite options: Maple Pecan and Blueberry Flax.
