Gluten-Free, Dairy-Free “Crumbs” Cupcakes

Although most of us adapt just fine to living gluten free over time, there are always gluten-full recipes that we miss, ones for which we would really love a gluten-free version. And by “love” I mean we’d jump and down and do somersaults if someone handed us a safe, gluten-free version that tasted just as good. Jeanette (Jeanette’s Healthy Living) created her own “Crumbs” Cupcakes—gluten free and dairy free—so her son could enjoy the same type of fun and delicious cupcakes that the rest of the family enjoys from their local bakery.

I have no doubt that her son was absolutely thrilled that his mom made these delightful treats for him. I want a couple for myself! Despite the impressive appearance of these cupcakes, Jeanette says that the recipe is not hard to make. She used ready-made cake mix, dairy-free milk, dairy-free “butter,” and ready-made gluten-free, dairy-free toppings like Oreo-style cookies, chocolate chip cookies, and mini chocolate chips. Jeanette summarizes this dessert:  “These gluten-free, dairy-free “Crumbs” Cupcakes are fun for summer entertaining, and will satisfy everyone’s sweet tooth, whether they have food allergies or not.”
