Heather at Celiac Family uses a ready-made gluten-free sugar cookie mix to make her base for this super pretty, and undoubtedly delicious, Fruit Pizza Dessert, but I think you could easily use your own “from scratch” gluten-free sugar cookie dough. Just make sure to use an amount that would make the same amount of cookies as the ready-made mix, which about 20 average-sized cookies.
Select fruit of your choice and spend as much time as you like arranging the topping for your pizza. Get the kids involved, too! Heather took just a few minutes to create a lovely design using sliced kiwi, strawberries, and blueberries in the pizza shown in the photo. As made, Heather’s pizza is gluten free only, but with a few substitutions a gluten-free, dairy-free version, and even a refined sugar-free fruit pizza could be made. This Fruit Pizza Dessert would be a terrific special occasion dessert. Heather has made this recipe for family birthdays and birthday candles could easily be inserted in the topping and/or into the fruit slices!
