Fig Newtons are a cookie beloved by many, if not all. However, these Fig Pinwheels from Bill and Haley at The Food Lovers Kitchen are sure to bring more folks over to the fig cookie lovin’ fold. These Fig Pinwheels require several steps and some time (e.g., an hour for soaking the figs in pomegranate juice, 30 minutes for the dough to chill in the freezer), but the photo shows that they are clearly worth it. With ingredients like almond flour, figs, coconut oil, maple syrup, and pomegranate juice, it’s not surprising that Bill and Haley call these Fig Pinwheels “equal parts gourmet and home-made goodness.” That’s a combination that always appeals to me, plus I appreciate that these cookies are not only gluten free, but also grain free, dairy free, and refined sugar free.
