  2. Needing to make this for our girl’s bday this weekend. I used to make one every year from scratch, but now our son has CD so I didn’t know if I could just use my old recipe and sub GF flour. This one looks great, but I usually make it in a 9×12 pan, do you think this recipe would work in that size pan, maybe adjusting the baking time? Thanks!

    I am dairy free. What can I substitute for the frosting so it would be dairy free as well as the gluten free?

    • Joyce–Hope there are some dairy-free cream cheese options that you can use per Mary’s suggestion. I heard that Daiya has come out with a soy-free one. There are some other dairy-free “cream cheese” recipes online, too. Good luck!

    Using a 13×9 pan should work just fine…and yes, you may need to adjust the time a bit using a toothpick for a gauge. Happy Birthday to your daughter!

    You could try a dairy substitute cream cheese, like Tofutti or Galaxy Nutritional Foods has one as well. I haven’t tried either but you might have luck! Let us know how you do!
