These Dark Chocolate Truffles from Elana’s Pantry are just what you need to make for a special treat when it’s too hot to turn on your oven. Your food processor and refrigerator work the majority of the magic with these gorgeous confections, although the shell coating is created using the stovetop. True to Elana’s nature, these truffles are made from wholesome ingredients: coconut oil, coconut butter, stevia, honey, orange zest, cacao powder, and cacao butter, plus a sprinkle of coarse salt, if you wish (I do!). Elana says the result is a “fantastic dark chocolate truffle, full of healthy, antioxidant rich cacao powder.” I’ll take one!
