Cream Puffs are one of those recipes that awe folks. The thing is that Cream Puffs, which are made from pate a choux or choux pastry (as are profiteroles, croquembouches, éclairs, French crullers, and beignets), can be really easy to make. Yes, even gluten-free Cream Puffs. This recipe comes to us from Jeanine of The Baking Beauties (who is also the author of The Everything Guide to Living Gluten Free—a great resource!). She says these “cream puffs are awesome … Totally crisp, with a beautiful hollow in the middle.”
I love how Jeanine not only topped her Cream Puffs with homemade fudge sauce, but also filled them with sweet and pretty pink filling. Jeanine notes in a comment on her post how she easily made the filling using heavy whipping cream, vanilla pudding mix, raspberry extract, and a single drop of red food coloring. The result is a dessert that is fairly easy to make, but that also tastes decadently good and scores very high on presentation. That’s always a winning combination!
