Chrystal of Gluten-Free Palate says that her Coconut & Pecan Banana Bread contains three of her most favorite ingredients. Well, I’m right there with her on coconut, pecans, and bananas! She also uses gluten-free all-purpose flour, millet flour, sugar, eggs, yogurt, coconut oil, baking soda, salt, cinnamon, and nutmeg in this recipe.

Quick breads like this one make wonderful multi-purpose recipes. They work as dessert, breakfast, and snack food, and often even fit the bill as a bread to complement a savory meal. I especially love breads like these for a tea or giving a loaf to a friend in need of some comfort and care. Oh, and would it be wrong to throw a few chocolate chips into the batter from time to time when one makes this recipe? I think not.
