Cinnamon Raisin Scones from The Daily Dietribe

These Cinnamon Raisin Scones from Iris at The Daily Dietribe are pretty amazing. Coconut flour is the flour in this gluten-free, grain-free, dairy-free, and nut-free recipe. Yet, surprisingly, these scones are egg free, too, as well as vegan. The raisins, apple juice, and cinnamon supply all the sweetness needed; no sugar needed. Iris says “These scones are mild and slightly cakey with a strong coconut flavor. Top them with coconut oil and enjoy with your morning tea.” Of course, I’d have to add a drizzle of honey to mine … the scones, not the tea.

Iris is the co-author of the outstanding cookbook series, The Essential Gluten-Free Baking Guide:  Part I (Learn how to use Amaranth, Almond, Quinoa, Garbanzo, Millet, and Coconut Flour in 50+ recipes) and The Essential Gluten-Free Baking Guide:  Part II (Learn how to use Sweet Rice, Sorghum, Buckwheat, Teff, Cassava and Potato Flour in 50+ recipes). She is also hosting an upcoming program called The Anti-Diet 30-Day Spring Challenge.

    • Hey there, Amber!–It does sound like you guys are going to love this recipe for sure. :-) I’m thinking about making these scones subbing chocolate chips for the raisins. That would have to be a winner, don’t you think? ;-) Oh, wait, I think your hubby might be the chocolate lover in your family, not you.
