Well, Thanksgiving has passed (and if you celebrate, I hope yours was wonderful!), so now it’s time to turn our attention to the other upcoming holidays and dessert recipes that will make everyone’s season bright! Let’s start with  these beautiful Paleo Holiday Cookies from Andrea at Pacific Wanderlust. Cut-out cookies are always a very pleasurable requirement of holiday baking to me, so I’m really happy to have a great recipe that’s grain free, dairy free, refined sugar free, and paleo. Time to get out all our favorite holiday cookie cutters … reindeer, snowmen, Christmas trees, stars, stockings, candy canes, angels, and gingerbread people. Yes, Andrea even gives you a gingerbread variation with her recipe!

Coconut Chocolate Chip Magic Granola Bars from Chocolate-Covered Katie

Coconut Chocolate Chip Granola-Bars Chocolate-Covered Katie

Katie of Chocolate-Covered Katie always knows how to push my buttons when it comes to delicious, healthier treats, and these Coconut Chocolate Chip Magic Granola Bars are no exception. The recipe includes oats, shredded coconut, oat flour, salt, mini chocolate chips, coconut or vegetable oil, sweetener of choice, milk of choice, and vanilla extract. Katie says that if you use coconut oil, you can freeze these bars instead of baking them. Now that’s a very cool option! (And that’s a naturally occurring pun.) I think these would make really great treats for home, work, or school.

Get Katie’s Coconut Chocolate Chip Magic Granola Bars recipe over at Chocolate-Covered Katie. p.s. Special congratulations to Katie on her upcoming cookbook, Chocolate-Covered Katie:  Over 80 Delicious Recipes That Are Secretly Good for You! (You can preorder it now here.)
