Gluten-Free Banana Cake from The Gluten-Free Homemaker

Everyone seems to have a good banana bread recipe in their recipe repertoire but how about a recipe for Banana Cake? Linda (The Gluten-Free Homemaker) has a Banana Cake recipe for you. She says:  “This gluten-free banana cake is so moist and delicious that everyone (gluten free or not) will love it.” I believe her! Linda adds:  “The butter, bananas, and mayonnaise keep this cake moist and the sorghum flour gives it a nice soft texture.” While mayonnaise might sound like an odd ingredient for a cake to some of you, it’s been used in cakes for decades. As Linda shares, mayonnaise is made of mostly eggs and oil, which are typical ingredients for cakes. The cake does not need frosting, but Linda usually adds a simple glaze as shown.
