I’m a self-confessed pound cake lover. From way-y-y-y back. I love my Perfect Pound Cake, but every now and then I want to enjoy a really good grain-free pound cake. I actually made this Grain-Free Chocolate Chip Pound Cake from Gluten-Free Canteen and it more than delivers!
I had only half of cup of almond flour on hand, so I substituted hazelnut flour for the rest of the measurement. As you might imagine, the combination of hazelnut flour and chocolate chips is a pretty amazing one! It’s good to know that you can’t go wrong with either almond flour or hazelnut flour in this recipe. And I love that it’s not a huge pound cake, just a small loaf. In fact, Lisa calls it a “half-pound” cake because it doesn’t contain a pound of each of the ingredients as pound cakes did back in the day.
