Linda, The Gluten-Free Homemaker, makes her Carrot Cake for birthdays and special occasions. As one son was enjoying a slice of this cake on his brother’s birthday, he paused to say, “Can we have this cake every night after dinner? I’m pretty sure I wouldn’t get tired of it if I only ate one piece every night.” Linda adds, “That’s how good it is.” Indeed. That fact is clear simply from viewing Linda’s photo. One look and we’re all imagining a bite of this divine cake! Note that while cream cheese frosting is often used to ice carrot cakes—and, of course, makes for a delicious combination—Linda now uses a vanilla frosting as a dairy-free option.
